Potato Stuffed Paratha | Aloo Paratha
Potato Stuffed Paratha | Aloo Paratha is a most popular breakfast and everyone loves it. It is very filling breakfast and you can have this in lunch or in your tiffin boxes.
It is made up of Potatoes and whole wheat flour. Give this a try and you and your family will definitely like it.

Ingredients
For Stuffing:
Potato : 1 pound (1/2 kg) (Boiled)
Green Chilies : 3-4 or according to taste (Finely chopped)
Ginger : 1 tsp (Grated)
Cilantro : 2 tbsp (Chopped)
Dry Fenugreek Leaves (Kasuri Methi) : 1 tbsp (Crushed)
Turmeric powder : 1 tsp
Red Chili powder : 2 tsp or according to taste
Coriander powder : 2 tsp
Dry mango powder (Aamchur powder) : 2 tsp
Roasted Cumin powder : 2 tsp
A pinch of Asafoetida (Hing)
Salt : According to taste
Garam Masala : 1 tsp
Fennel Seeds (Saunf) : 1 tbsp (Optional)
For Dough:
Whole Wheat flour : 2 cups
Salt : 1/2 tsp
Water : Required for making soft dough
Oil or Butter for roasting Paratha
Directions
Take the potatoes and add 2 cups of water to steam potatoes
Steam potatoes for 12 minutes on "Steam veggies" option in electric cooker or for 2 whistles in pressure cooker
Peel the boiled potatoes and mash them
Add rest of all the ingredients and mix it well
For making dough, take whole wheat flour
Add Salt
Mix it and gradually add water to make a soft dough
Keep it for rest for about 20 minutes
After 20 minutes, take a lemon sized ball from the dough
Dust with flour
Roll it up to 5-6 inches of diameter
Add potato stuffing and secure it tightly
Again dust with flour
Roll it with light pressure
On a hot pan, roast the paratha from one side
Flip and roast from another side
Apply oil or butter on both sides and roast it
Stuffed Aloo paratha is ready to be served
Serve it hot with Tomato ketchup, curd or your favorite chutney.
